I'm about to get a little corny

Is there any food more reminiscent of summer than corn-on-the-cob? I can't see an ear of corn and not be transported back to childhood summers full of Fourth of July potluck picnics, cookouts in the backyard, or  beachfront dinners. There are so many things you can do with corn. You can boil it, scrape if off the cob and saute it, or add it into casseroles (hmm I feel a lot like Bubba from Forest Gump right now). It is great in bean salads and pasta salads. Simply adding a bit of butter and salt will create a simply side dish to satisfy even the pickiest of dinner companions.

 

As the weather is gets warmer, my folks fire up the grill more and more. This weekend we decided to have a little fun with some fresh corn. The recipe we created gives a slight nod to the delicious elote or mexican street corn. We strayed pretty far form the traditional recipe using Dukes mayonnaise and Well Seasoned Table Taco/Chili Seasoning, but our end result was every bit as delicious as the original. You can definitely replicate this dish in the oven, but I think the grill gives it a nice flavor. We chose to keep things a bit neater by wrapping each ear in foil, but feel free to pop these suckers straight on the grill for even more oomph. 

 

This corn is going to pair great with any summer dish you cook up. We chose chicken wings (stay tuned for another WST recipe next week) and a fresh salad to balance out the richness of this corny side dish. I can see this working well with steaks, a big seafood broil, or even grilled salmon. You could even cut the ears up into 4ths or 5th and you have an instant, bite-sized appetizer to pass out at your next party. However you decide to enjoy corn this summer, be sure to use your favorite Well Seasoned Table sea salt or seasoning to make it extra delicious!

Ingredients:

  • 4 ears of corn

  • 1/4 cup of mayonnaise

  • 1/8 cup cheese (parmesan, feta, cojita, etc)

  • 1 Tablespoon of WST Taco/Chili Seasoning

  • extra pinch of WST Taco/Chili Seasoning 

Directions:

  1. Mix mayonnaise, cheese and WST Seasoning (1 Tablespoon) in small bowl.

  2. Spread mixture evenly over ears of corn

  3. Wrap each ear of corn in foil.

  4. Place on grill for 10-15 mins or until the corn is cooked all the way through.

  5. If you decide to forgo the foil, put the corn on the grill BEFORE you coat with the wet mixture. 

  6. Sprinkle cooked ears of corn with extra WST seasoning before serving.

  7. Enjoy!
